We used all chicken thighs with the skin left on and grilled the chicken instead of baking it. It turned out fantastic.

Tips: If you can’t find vanilla bean substitute vanilla extract 1 tablespoon for 1 vanilla bean. We also add fresh berries to ours and add a little extra turbinado sugar to make a thicker crust.
